Dylan & Charlie: A Close Catch in the Culinary Race
Dylan Martinez and Charlie Newbold went above and beyond to prepare their Thai-infused sea bass with Pak choi and fennel seed rice, practicing during lunch breaks and arriving early to perfect their craft. Their dedication paid off when they reached the regional final at West Herts Catering College, competing against 15 other students. Although they finished just one point shy of first place, their skills, professionalism, and teamwork were extraordinary. Judges praised their technique, particularly their bravery in filleting fish with precision and their ability to create a dish with perfect flavour balance. Both Dylan and Charlie are already eager to return next year, and their parents couldn’t be prouder of their achievements. In the eyes of many, their presentation and skills were second to none, and this experience will be invaluable for their future.


The judges’ comments were:
“ that was extremely brave to fillet fish in a competition and I know seasoned chefs who cannot fillet fish like you”.
“Flavours were great with a nice level of heat”.
“ both worked so clean, methodically and calm”.
Food Technology Teacher, Mr Gunyon said: “I personally thought they showed more advance skills then the winning entry and their presentation was the best. Maybe being in year 11 was an advantage for the winners but the experience gained will be so beneficial for the future”.
